Folk Fare: Buttermilk Pie
An old-fashioned favorite, from the days when nothing went to waste.

sugar
3 Tbsp.
flour

buttermilk
2 Tbsp.
melted butter
1 tsp.
vanilla
3 Tbsp.
lemon juice
grated rind of one lemon
cinnamon (to dust on top)
Crust:
Prepare your favorite pie crust (or buy one), and bake 10 minutes in a hot oven (450F) until set but not brown.
Filling:
Beat together the eggs and sugar
Stir in the flour, beat again
Pour in buttermilk; add the butter, vanilla, lemon juice, and rind
Mix together and pour into the pie crust
Baking:
Bake at 375F for 20-30 min., or until the filling just sets
Do not overbake or it will toughen
Dust with cinnamon and serve with fruit, if desired.
